Directly to the west and southwest of Brussels, within the Flemish Brabant province of Belgium, is a picturesque region known as Pajottenland. This charming countryside is home to quaint villages, pastures full of livestock and undulating farmlands. Most importantly, for our purposes on The Hop Leaves, it has historically served as a major cradle for traditional lambic brewing and blending.
Operating amongst these famed brewers and blenders of this section of Belgium, in a tiny village known as Eizeringen, is an enchanting little inn. This is no ordinary inn, it is quite special, because it is home to a café known as In De Verzekering Tegen De Grote Dorst. Loosely translated, that means "In the insurance against the great thirst." This confident declaration is not without merit, as you are about to leaf through one of the finest Belgian bottle lists within the beer galaxy. Do you have a particular year of a vintage gueuze that you've always wanted to revisit? Have you been looking high and low for it? Grote Dorst is probably your best chance for success, and may even have a sizable vertical, it's just that comprehensive.

Why is this on THL?
This magical little space is the perfect place to reflect on your Pajottenland adventure. The storybook charm serves the surrounding brewing community exceedingly well, as a champion for showcasing the greatest achievements the region has to offer. It's no wonder they've been recognized by media outlets as the best bar in Belgium and even the world for that matter. After a calculated and thoughtful renovation (2001 to 2005), it seems that everything is going swimmingly for this truly specialized little operation. If you are into Belgian delights, particularly those that make you pucker, you've finally found your promised land. With very limited hours of operation, on Sundays from 10:00 to 20:00, you'll need to plan accordingly.
